Sweet Planked Salmon

Ingredients

  • large salmon fillet(1 1/2 - 2 lbs)
  • 1 cup of maple syrup
  • 1 cup orange juice
  • 1 T. freshly grated ginger
  • dash of salt

Instructions

  1. Marinate salmon with orange juice, ginger and 1/2 cup of maple syrup for one hour.
  2. Soak the cedar plank in water for 20 minutes.
  3. Preheat grill to medium heat
  4. Drain salmon and place on cedar plank. Place plank on grill and cool on medium heat for about 20 minutes or until salmon is cooked throughout. As the salmon cooks, baste with the extra syrup, as desired.
  5. For a slightly charred look, carefully remove the salmon from the plank - if the skin is still on - you can slide the spatula directly between the meat and skin and the skin will stick to the plank. Then place the meat gently on the grill and cook for a few minutes longer.
  6. Serve garnished with lemon slices on top.
