Sweet Potato Apple Bread

Ingredients

  • 1/3 c. softened butter or margarine
  • 1/2 c. sugar
  • 1/2 c. firmly packed light brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2/3 c. cooked and mashed sweet potatoes
  • 1/2 c. apple butter
  • 2 c. self-rising flour
  • 1/2 c. chopped pecans

Instructions

  1. Preheat oven to 350 degrees. Grease and lightly flour a 9x5x3 inch loaf pan. In a large bowl, combine the butter, sugar, brown sugar, eggs, vanilla extract, sweet potatoes and apple butter. Beat until well mixed.
  2. Gradually add the flour and beat until mixed.
  3. Stir in pecans. Pour into prepared loaf pan and bake for about 55 minutes or until a toothpick comes out clean when inserted into center of bread.
  4. Turn out of pan immediately after removing from oven.
