Sweet Potato Bars

Ingredients

  • 1 box french vanilla cake mix (set aside 1/2 c. of mix)
  • 5 eggs
  • 1/3 c. oil
  • 1/2 c. chopped nuts
  • 4 c. cooked sweet potatoes, mashed
  • 1 can Eagle brand milk
  • 1/4 c. brown sugar
  • 1 tsp. vanilla
  • 8 oz. cream cheese (room temperature)
  • 1 box powdered sugar

Instructions

  1. With a fork, mix cake mix (but not the 1/2 c. reserved), 1 egg, 1/3 c. oil and the 1/2 c. pecans.
  2. Spread in a 9x13-inch baking dish.
  3. In another bowl mix the mashed potatoes, Eagle brand milk, 2 eggs, brown sugar and the 1/2 c. cake mix and vanilla. Pour over cake mixture.
  4. Then mix cream cheese, 2 eggs and the box of powdered sugar and pour over potato mixture.
  5. Bake at 350° for 35 to 40 minutes.
