Sweet Potato Nut Log

Ingredients

  • 2 c. cooked sweet potatoes
  • 1/4 c. margarine
  • 1 tsp. salt
  • 1/4 c. flour
  • 1/2 c. brown sugar
  • 1/2 tsp. nutmeg
  • chopped pecans

Instructions

  1. Mash sweet potatoes in a large mixing bowl.
  2. Blend in margarine, salt, flour and sugar.
  3. Form into logs and roll in chopped pecans.
  4. Place in a greased, shallow pan.
  5. Bake at 325° for 30 minutes.
