Sweet Potato Slices

- Preheat oven to 375 degrees Fahrenheit. Pour vegetable oil into a 9 x 13 inch baking dish and heat in the oven for about 5 minutes.
- Add peeled and sliced sweet potatoes to the hot oil in the dish and bake for 20 minutes, turning them after 10 minutes.
- In a small bowl, mix together brown sugar, ground cinnamon, salt, and freshly ground pepper.
- Remove the potatoes from the oven after 20 minutes and coat them with the brown sugar mixture.
- Return the dish to the oven and roast for another 10 minutes, or until the potatoes are tender and golden brown. Stir as necessary for even browning.
- Remove the potatoes from the oven, drain on paper towels, and transfer to a serving dish.
