Ingredients

  • 1/4 cup vegetable oil
  • 2 pounds sweet potatoes peeled and sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1 pinch freshly ground pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Pour vegetable oil into a 9 x 13 inch baking dish and heat in the oven for about 5 minutes.
  2. Add peeled and sliced sweet potatoes to the hot oil in the dish and bake for 20 minutes, turning them after 10 minutes.
  3. In a small bowl, mix together brown sugar, ground cinnamon, salt, and freshly ground pepper.
  4. Remove the potatoes from the oven after 20 minutes and coat them with the brown sugar mixture.
  5. Return the dish to the oven and roast for another 10 minutes, or until the potatoes are tender and golden brown. Stir as necessary for even browning.
  6. Remove the potatoes from the oven, drain on paper towels, and transfer to a serving dish.
