Sweet-Sour Potatoes

Ingredients

  • 8 medium potatoes, peeled, sliced and cooked in salted water
  • 5 or 6 slices bacon, fried crisp
  • bacon grease
  • 1 c. sugar
  • 3/4 c. vinegar
  • cornstarch

Instructions

  1. Peel and slice or dice potatoes.
  2. Cook in salted water until done.
  3. Fry bacon crisp and set aside.
  4. In bacon grease, add 1 cup sugar and 3/4 cup vinegar.
  5. Bring to boil until sugar is dissolved.
  6. Add a thickening of cornstarch.
  7. While potatoes are hot, add 1 small onion and the sauce, stirring well.
  8. Add bacon (crumbled).
  9. Serve warm.
