Ingredients

  • 1/2 lb. country style bulk pork sausage
  • 1 medium tomato (optional)
  • 1/2 tsp. dried basil, crushed
  • 1/2 cup shredded American cheese (2 oz.)
  • 1/4 cup sliced green onion
  • 8 beaten eggs
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In an 8 x 1 1/2-inch round baking dish, crumble the sausage.
  2. Microwave, uncovered, on high power for 3 to 5 minutes or until the meat loses its pink color, stirring once during cooking.
  3. Drain off fat, reserving 2 tablespoons of drippings in the baking dish.
  4. Place the cooked sausage on paper towels to drain excess fat.
  5. In a bowl, beat the eggs with milk, salt, and pepper.
  6. Pour the egg mixture into the baking dish with sausage drippings.
  7. Bake or cook on stovetop over low heat, stirring gently until eggs are just set.
  8. Sprinkle with shredded American cheese, green onions, and dried basil.
  9. Continue cooking until cheese melts and eggs are fully cooked.
  10. Serve hot.
