Ingredients

  • 3/4 cup chop pecans
  • 3 cups peeled grated carrots
  • 4 cups peeled grated sweet potatoes
  • 2 cups peeled grated gala apples
  • 1 cup matzo meal
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • cinnamon
  • nutmeg

Instructions

  1. Heat oven to 350 arrange pecan in single layer on baking sheet bake 5-7 minutes till toasted. Cool. Reserve 3 T pecan. Reduce oven to 325 stir together remaining ingredients with pecans. spoon into lightly greased ramekins. Bake covered 45 min increase temp to 350 uncover bake till edges are golden brown top with reserved pecans.
