Ingredients

  • 1 egg
  • 1/3 cup milk
  • 1/4 cup shortening
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Grease muffin pan.
  2. In a mixing bowl, beat the egg slightly.
  3. Stir in milk and shortening.
  4. Add dry ingredients and mix well.
  5. Fill muffin cups about 2/3 full.
  6. Bake at 400°F for 20 to 25 minutes.
  7. Optionally, fill cups 1/3 full and add 1/2 teaspoon of jelly, then top with batter.
