Ingredients

  • 2 thin slices reduced-fat Swiss cheese
  • 4 chicken breast halves (1/4-inch thick; 4 oz each)
  • 2 Tbsp all-purpose flour
  • 1/2 tsp black pepper
  • 1 Tbsp unsalted butter or margarine
  • 1/2 cup reduced-sodium chicken broth
  • 1/4 c. reduced-sodium chicken broth

Instructions

  1. Cut each cheese slice in half and place one half on top of each chicken breast.
  2. Starting at a short end, tightly roll up each chicken breast around the cheese.
  3. Tie each roll securely with kitchen string.
  4. In a skillet, melt the butter or margarine over medium heat.
  5. Add the chicken rolls and cook until browned on all sides, about 8-10 minutes.
  6. Pour in 1/2 cup of reduced-sodium chicken broth and cook until the chicken is cooked through and the broth has reduced slightly, about 10 minutes.
