Ingredients

  • 1 (20 oz.) can Dole sliced pineapple
  • 1 clove garlic
  • 1 Tbsp. cornstarch
  • 2 tsp. Worcestershire sauce
  • 2 tsp. Dijon mustard
  • 1 tsp. rosemary, crumbled
  • 3 whole chicken breasts, split
  • 1 tsp. salt
  • 1 small lemon, thinly sliced

Instructions

  1. Drain pineapple, reserving the juice.
  2. Combine the reserved pineapple juice with garlic, cornstarch, Worcestershire sauce, Dijon mustard, and crumbled rosemary to make the sauce.
  3. Arrange the split chicken breasts in a shallow casserole dish, skin side up, and sprinkle with salt.
  4. Broil the chicken until browned.
  5. Stir the prepared sauce to recombine.
  6. Pour the sauce over the chicken.
  7. Bake in a 400°F oven for 30 minutes.
  8. Arrange pineapple slices and lemon slices around the chicken.
  9. Spoon the sauce over all ingredients.
  10. Bake for an additional 5 minutes to finish.
