Syrek is a traditional Slovak Easter cheese made from milk and eggs, resulting in a delicate, creamy treat flavored with vanilla and decorated for festive occasions.

Ingredients

  • 6 eggs
  • 1 quart milk
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla

Instructions

  1. Pour milk into a saucepan and break eggs into the milk, ensuring each yolk is broken.
  2. Add salt, sugar, and vanilla to the mixture and stir well.
  3. Do not cook over direct flame, as this mixture can scorch easily.
  4. Use a double boiler with low heat and stir frequently.
  5. Cook slowly until the mixture resembles scrambled eggs.
  6. Pour the mixture into cheesecloth and tie it tightly.
  7. Hang and drain for about 1 hour. Gently squeeze to remove excess liquid, then hang for about 3 hours.
  8. Remove cheese from the cloth and refrigerate until cooled.
  9. Decorate with cloves or pepper balls before serving.
