A fresh, vibrant Middle Eastern salad featuring bulgar wheat, tomatoes, herbs, and lemon, perfect for light meals, picnics, or as a side dish to grilled meats.

Ingredients

  • 1 cup bulgar wheat
  • 2 cups water
  • 3 medium tomatoes, chopped
  • 1/2 cup chopped parsley
  • 1/2 cup minced scallion or chive or onion
  • 1/4 cup lemon juice
  • 2 teaspoons salt
  • 1/2 cup chopped cukes
  • 2 tablespoons fresh mint, crushed
  • 1/3 cup olive oil or regular

Instructions

  1. Place bulgar wheat and water in a large bowl and let soak for at least 1 hour; drain.
  2. Add chopped tomatoes, chopped parsley, minced scallion or onion, chopped cukes, lemon juice, salt, and crushed mint; toss well.
  3. Just before serving, stir in olive oil or regular oil.
  4. Serve on Romaine lettuce.
