Green Rice With Spinach

Ingredients

  • 1 1/2 Tbsp canola oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, seeded and dried
  • 1 jalapeno pepper, seeded and minced
  • 2 c water
  • 1 c long grain white rice
  • 1 Tbsp dried parsley
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 c chopped fresh spinach

Instructions

  1. In a large saucepan or Dutch oven, heat canola oil.
  2. Add diced onion, minced garlic, dried bell pepper, and minced jalapeno; sauté for 5 to 7 minutes until onions are tender.
  3. Add water, rice, dried parsley, ground cumin, salt, and pepper.
  4. Cover the saucepan and simmer over medium heat for about 15 minutes (45 minutes if using brown rice).
  5. Stir in chopped fresh spinach and cilantro; cook over low heat for about 5 minutes until rice is tender.
