Ingredients

  • 1 can white boneless chicken
  • 1 lg. can chicken broth
  • 1 can chopped tomatoes
  • onions to taste
  • peppers to taste
  • 1 can corn
  • 1 pkg. taco seasoning
  • 2 cups Minute rice
  • shredded cheese

Instructions

  1. Mix the canned chicken, chicken broth, chopped tomatoes, onions, peppers, corn, and taco seasoning in a pot.
  2. Bring the mixture to a boil, then add the Minute rice.
  3. Turn off the heat and let it sit covered for 5 minutes.
  4. Serve the mixture over nacho chips or tortilla shells, topped with shredded cheese.
