Ingredients

  • 2 cups crumbled cornbread
  • 1/2 teaspoon salt
  • 1/2 cup shredded Monterey Jack cheese
  • 1 (10 oz) can mild enchilada sauce
  • 1 1/2 pounds ground beef
  • 1 (8 oz) can tomato sauce

Instructions

  1. Combine crumbled cornbread, half a cup of enchilada sauce, and salt in a mixing bowl.
  2. Add ground beef to the mixture and mix well.
  3. Shape the mixture into small balls.
  4. Bake the meatballs at 350°F (175°C) for 20 minutes.
  5. While baking, heat the remaining enchilada sauce and tomato sauce in a saucepan.
  6. Place the cooked meatballs in a serving dish.
  7. Pour the heated sauces over the meatballs and top with shredded Monterey Jack cheese.
