Delightful tangerine macaroons combine coconut, pecans, and citrus peel for a sweet, nutty treat perfect for parties or a flavorful snack.

Ingredients

  • 2 egg whites
  • 1/2 tsp. vanilla
  • 2/3 c. sugar
  • 1 c. flaked coconut
  • 1/2 c. finely chopped pecans
  • 2 tsp. grated tangerine peel

Instructions

  1. In a small mixer bowl, beat egg whites and vanilla until soft peaks form.
  2. Gradually add sugar, beating until stiff peaks form.
  3. Fold in coconut, pecans, and tangerine peel.
  4. Drop by rounded teaspoonfuls 1 1/2 inches apart onto a greased cookie sheet.
  5. Bake in a 325°F oven for 10 to 12 minutes or until done.
  6. Remove and cool.
