Spinach Scalloped Franks

- Saute chopped onions in shortening until translucent.
- Add flour and cook for 1-2 minutes to make a paste.
- Slowly mix in milk, stirring constantly to prevent lumps.
- Heat the mixture, stirring constantly, until it thickens.
- Remove from heat and stir in 3/4 cup shredded Cheddar cheese until melted.
- Add drained spinach to the cheese sauce.
- Layer half of the sliced cooked potatoes, franks, and sauce in a casserole dish.
- Repeat layering with remaining potatoes, franks, and sauce.
- Cover and bake in a 350°F oven for 45 to 50 minutes.
- Uncover and sprinkle the remaining 1/4 cup cheese on top, then continue baking until cheese melts.
