Ingredients

  • 2 1/2 cups sliced cooked potatoes
  • 1/4 cup chopped onions
  • 3 tablespoons shortening
  • 2 tablespoons flour
  • 3/4 cup milk
  • 1 cup shredded Cheddar cheese
  • 6 ounces drained spinach
  • 1/2 pound franks, cut into 1/2-inch pieces

Instructions

  1. Saute chopped onions in shortening until translucent.
  2. Add flour and cook for 1-2 minutes to make a paste.
  3. Slowly mix in milk, stirring constantly to prevent lumps.
  4. Heat the mixture, stirring constantly, until it thickens.
  5. Remove from heat and stir in 3/4 cup shredded Cheddar cheese until melted.
  6. Add drained spinach to the cheese sauce.
  7. Layer half of the sliced cooked potatoes, franks, and sauce in a casserole dish.
  8. Repeat layering with remaining potatoes, franks, and sauce.
  9. Cover and bake in a 350°F oven for 45 to 50 minutes.
  10. Uncover and sprinkle the remaining 1/4 cup cheese on top, then continue baking until cheese melts.
