Ingredients

  • 1 cup sugar
  • 2 1/2 tablespoons cornstarch
  • 2 cups water
  • 1/3 to 1/2 cup lemon juice
  • 2 teaspoons grated lemon rind
  • 2 tablespoons butter
  • 2 egg yolks, slightly beaten

Instructions

  1. Combine sugar and cornstarch in a saucepan.
  2. Gradually add water, blending until smooth.
  3. Cook over medium heat, stirring constantly, until mixture is thick and clear.
  4. Remove from heat. Blend about 1/2 cup of hot mixture in the saucepan and cook for 2 minutes.
  5. Add lemon rind, lemon juice, and butter.
  6. Serve warm or cold. Sauce may be refrigerated and reheated.
