Ingredients

  • 1/4 cup mayonnaise
  • 2 tablespoons drained pickle relish
  • 1 1/2 to 2 cups country style mashed potato flakes
  • 2 eggs
  • 1 teaspoon salt
  • 2 pounds fish fillets
  • oil to fry fish

Instructions

  1. Lightly beat together mayonnaise, eggs, pickle relish, and salt.
  2. Dip fish fillets into the egg mixture, then into the potato flakes, coating well.
  3. Fry in oil for 5 to 10 minutes until crisp.
  4. Turn the fish and fry the other side until cooked and golden.
