Ingredients

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 14 lb cauliflower, chopped into small pieces
  • 1 cup quinoa, cooked
  • 14 cup ground flax seeds
  • 12 teaspoon salt
  • 12 cup shallot, finely minced
  • 14 cup whole wheat flour
  • 1 -2 tablespoon olive oil

Instructions

  1. In a large bowl, mash chickpeas until mostly broken up.
  2. Add in remaining ingredients and mix until combined.
  3. Mixture probably won't hold together too well, but don't worry - it will firm up when frying.
  4. Do your best to form into tater tot shapes.
