Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup margarine or butter
  • 1/2 cup homogenized milk
  • juice of 1 large lemon
  • 1 1/4 cups sugar
  • grated rind of 1 large lemon

Instructions

  1. Mix dry ingredients thoroughly.
  2. Cream margarine, 3/4 cup sugar and lemon rind, then beat in eggs one at a time.
  3. Stir in flour mixture alternately with milk, beginning and ending with flour.
  4. Stir until smooth after each addition.
  5. Turn batter into a buttered 9 x 5 x 3-inch loaf pan and bake at 350°F for about 45 minutes or until a cake tester inserted in the center comes out clean.
  6. Stir 1/2 cup sugar and lemon juice together and spread over top of hot bread.
  7. Remove from pan after cooling, about 10 minutes.
