Tempah-Popcorn Rice

Ingredients

  • 2 c. popcorn rice
  • 4 c. water
  • 2 Vegex cubes
  • 1 pkg. soy tempah
  • 1 onion, finely chopped
  • 6 cloves garlic, finely chopped
  • 1/4 c. soy sauce
  • 1/4 c. olive oil
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 small carrots, chopped
  • black olives, chopped
  • 10 to 12 sun-dried tomatoes, soaked

Instructions

  1. Boil water with Vegex.
  2. Add rice.
  3. Reduce heat.
  4. Cook until water is absorbed and rice is tender; set aside.
