Ingredients

  • 1 to 2 lb. beef or pork tenderloin strips
  • 3/4 lb. thinly sliced deli ham
  • chopped chives
  • 3/4 lb. bacon
  • garlic
  • toothpicks

Instructions

  1. Make small cuts in the tenderloin and insert slivers of garlic into the cuts. Roll the tenderloin in chopped chives.
  2. Place bacon strips on foil.
  3. Lay ham slices on top of the bacon strips.
  4. Place the prepared tenderloin on the ham slices.
  5. Roll up the tenderloin in the ham slices.
  6. Secure the rolled meat with toothpicks to hold it together.
  7. Wrap the entire roll in foil.
  8. Bake in the oven for 1 hour or grill for 45 minutes using indirect heat.
  9. Let the tenderloin rest for 10 minutes before serving.
