Ingredients

  • 1 can corned beef
  • 1 small can peas, drained
  • 1 medium onion, chopped
  • 2 hard boiled eggs, chopped
  • 1 package lemon Jello (dissolved in 2 cups boiling water)
  • 1 cup celery, diced
  • 1 green pepper, chopped
  • 1 cup mayonnaise
  • Salt
  • Pimento

Instructions

  1. Make the lemon Jello and set aside to cool.
  2. Break the corned beef apart with a fork.
  3. Add chopped vegetables, eggs, salt, and mayonnaise to the corned beef.
  4. Mix all ingredients with the cooled Jello.
  5. Garnish with chopped pimento and chill until set.
