Texas Corn Chowder

Ingredients

  • 1/4 c. chopped onion
  • 1 Tbsp. butter or margarine
  • 1 Tbsp. all-purpose flour
  • 1 c. diced peeled potatoes
  • 1 c. water
  • 1 chicken bouillon cube
  • 1 c. corn
  • 1 or 2 tsp. finely chopped jalapeno or green chilies
  • 2 c. milk
  • 1/4 tsp. garlic salt
  • 1/8 tsp. pepper
  • dash of paprika

Instructions

  1. In medium saucepan, saute onion in butter until tender. Stir in flour. Add potatoes, water and bouillon. Bring to a boil; reduce heat, cover and simmer 7 to 10 minutes or until potatoes are tender. Add corn, jalapeno, milk and seasonings. Cover and simmer 15 minutes. This recipe only serves 2. Double if you want more.
