Ingredients

  • 1 can cream of chicken or shrimp soup (undiluted)
  • 3/4 cup grated Jack cheese
  • 2 tablespoons sherry (optional)
  • 12 eggs

Instructions

  1. Blend and heat the undiluted cream of chicken or shrimp soup, grated Jack cheese, and sherry if using.
  2. Soft scramble the eggs in a separate bowl.
  3. Combine the scrambled eggs with the heated soup mixture.
  4. Pour the mixture into an ovenproof casserole dish.
  5. Refrigerate overnight.
  6. To serve, reheat in a 300°F oven for 1 hour.
