Ingredients

  • 17 oz. can sweet potatoes
  • 1 cup brown sugar
  • 1 1/2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 1 tsp. orange peel
  • 1 lb. can apricots or pears, drained
  • 2 Tbsp. butter

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 9 x 13-inch baking dish.
  3. Line the dish with sliced sweet potatoes and drained apricots or pears.
  4. Combine 1 cup of reserved syrup from drained fruit with brown sugar, cornstarch, salt, cinnamon, and orange peel.
  5. Bring the mixture to a boil and cook for 2 minutes.
  6. Add butter and nuts to the sauce.
  7. Pour the sauce over the layered sweet potatoes and fruit.
  8. Bake uncovered for 25 minutes.
