Ingredients

  • 1 pkg. Eckrich-type sausage
  • 1 medium onion, chopped
  • 1 (15 oz.) can Mexican style or regular chili beans
  • 11 oz. can corn
  • 1 (6 oz.) box Spanish-style rice mix

Instructions

  1. Cut up the sausage.
  2. Combine all ingredients except the Spanish rice into a crock-pot.
  3. Add 6 cups of water and the spice packet from the rice.
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  5. Stir in the remaining rice from the rice mix.
  6. Cover and cook on low for 1 hour or on high for 45 minutes.
