Ingredients

  • 2 lb. carrots
  • 1 c. sugar
  • 3/4 c. vinegar
  • 1/2 c. salad oil
  • 1 tsp. dry mustard
  • 1 can tomato soup
  • 1 onion, chopped
  • 1 bell (green) pepper, chopped
  • 1 jar pimentos (large), chopped
  • salt to taste

Instructions

  1. Combine sugar, vinegar, salad oil, dry mustard, tomato soup, chopped onion, chopped green pepper, and chopped pimentos in a bowl.
  2. Stir all ingredients together until well mixed.
  3. Add the carrots to the mixture and stir to coat evenly.
  4. Refrigerate the mixture for 24 hours to marinate.
  5. Serve cold.
