Thai Style Pork

Ingredients

  • 300 g pork fillet
  • 4 tbsp soy sauce
  • 1 tbsp clear honey
  • 2 tbsp sesame oil
  • 200 g basmati rice
  • 400 g small broccoli florets
  • 100 g red lentils, rinsed
  • 2 tbsp wok oil
  • 1 small onion, chopped
  • 2 tbsp sambal oelek
  • 3 tbsp roasted cashew nuts

Instructions

  1. Trim any excess fat from the pork and cut into thin slices. Put in a bowl, add the soy sauce, honey and sesame oil and mix well. Leave to marinate for 30 minutes.
  2. Cook the rice in boiling, salted water for 10 minutes. Add the broccoli florets and cook for a further 2-3 minutes until softened. Cook the lentils in a separate pan of water. Drain thoroughly.
  3. Heat the wok oil in a frying pan and fry the pork for 2 minutes, stirring. Add the onion and fry for a further 5 minutes. Stir in the sambal and cashew nuts. Stir in the rice, broccoli and lentils and mix well. Heat through for 3-4 minutes and serve.
