Ingredients

  • 3/4 cup softened butter
  • all-purpose flour
  • sugar
  • 3 egg yolks
  • grated peel of 2 small lemons
  • 5 (8 oz.) packages cream cheese
  • 5 eggs
  • 1/4 cup milk

Instructions

  1. In a small bowl with a mixer at low speed, beat the softened butter, 1/4 cup flour, 1/4 cup sugar, 1 egg yolk, and half of the grated lemon peel until well mixed; shape into a ball.
  2. Wrap the dough and chill for 1 hour.
  3. Preheat oven to 400°F (200°C).
  4. Press one-third of the dough into the bottom of a 10-inch spring-form pan with a 2 1/2-inch sides; bake for 8 minutes.
  5. Remove from oven and cool.
  6. Turn the oven temperature to 475°F (246°C).
