Ingredients

  • 1 (8 3/4 oz.) can whole kernel corn, drained
  • 3/4 c. raisins
  • 1/2 c. cider vinegar
  • 1/4 c. chopped onions
  • 1/4 c. chopped red or green bell pepper
  • 2 Tbsp. sugar
  • 1 tsp. mustard seed
  • 1 tsp. dry mustard
  • 1/2 tsp. salt
  • 1/8 tsp. red pepper flakes
  • torn greens (spinach, mustard or dandelion)

Instructions

  1. To make

  3. relish, combine corn, raisins, vinegar, onion, bell pepper, sugar, mustard seed, dry mustard, salt and pepper flakes.
  4. Bring
  5. to boil.
  6. Cover and simmer 15 minutes, stirring occasionally.
  7. Cool.
