Thick Tomato Juice
A rich, flavorful thick tomato juice perfect for drinking on its own or using as a base for soups and sauces, ideal for home canning enthusiasts.
Ingredients
- uncut tomatoes
- 1 tsp. canning salt ⓘ
Instructions
- Use a 7-quart cannerful of tomatoes or as many as you have. Rinse tomatoes and scald them in boiling water.
- Peel, cut, and remove the core from the tomatoes.
- Place the prepared tomatoes in the canner.
- Squeeze the tomatoes with your hand. Bring to a boil and stir until the tomatoes cook up.
- Strain the cooked tomatoes and put the juice into quart jars.
- Add 1 teaspoon canning salt to the top of each jar and seal.
- Place the jars in a canning pressure cooker and process for 10 minutes at 10 pounds pressure.
