A rich, flavorful thick tomato juice perfect for drinking on its own or using as a base for soups and sauces, ideal for home canning enthusiasts.

Ingredients

  • uncut tomatoes
  • 1 tsp. canning salt

Instructions

  1. Use a 7-quart cannerful of tomatoes or as many as you have. Rinse tomatoes and scald them in boiling water.
  2. Peel, cut, and remove the core from the tomatoes.
  3. Place the prepared tomatoes in the canner.
  4. Squeeze the tomatoes with your hand. Bring to a boil and stir until the tomatoes cook up.
  5. Strain the cooked tomatoes and put the juice into quart jars.
  6. Add 1 teaspoon canning salt to the top of each jar and seal.
  7. Place the jars in a canning pressure cooker and process for 10 minutes at 10 pounds pressure.
