Thirteen Bean Soup

Ingredients

  • 2 c. dried mixed beans
  • 2 qt. water
  • 1 to 2 lb. ham slice, diced
  • 1 large chopped onion
  • 1 (16 oz.) can tomatoes
  • 1 tsp. chili powder
  • juice of 1 lemon
  • salt
  • pepper

Instructions

  1. Cover beans with water and soak overnight; drain.
  2. Add water and ham.
  3. Boil; simmer for 3 hours.
  4. Add rest of ingredients. Salt and pepper to taste.
  5. Simmer for 30 to 60 minutes.
  6. Dish and serve.
  7. This soup also freezes nicely.
