Three-Bean Salad with Sweet Onions

Ingredients

  • 13 c. cider vinegar
  • 2 tbsp. vegetable oil
  • 1 tsp. sugar
  • 1 tsp. grainy Dijon mustard
  • 1/2 tsp. salt
  • 1/4 tsp. coarsely ground black pepper
  • 1 can red kidney beans
  • 1 carton pinto beans
  • 1 can pink beans
  • 2 medium celery stalks
  • 1/2 c. finely chopped sweet onion
  • 1/2 c. loosely packed fresh parsley leaves

Instructions

  1. In large bowl, with wire whisk, mix vinegar, oil, sugar, mustard, salt, and pepper until blended.
  2. Add kidney beans and remaining ingredients; toss well.
  3. Serve salad at room temperature, or cover and refrigerate until ready to serve.
