Ingredients

  • 1 lb. lean ground beef
  • 1 can low salt corn
  • 3 or 4 white potatoes, peeled and sliced thin
  • 1 can tomato soup
  • 1/3 can water

Instructions

  1. Preheat oven to 350°F.
  2. Brown the ground beef, drain and set aside.
  3. Drain the liquid from the corn and set aside.
  4. Cover the bottom of a 2-quart casserole dish with a layer of sliced potatoes.
  5. Put a layer of cooked ground beef over the potatoes.
  6. Put a layer of corn over the ground beef.
  7. Repeat layering with remaining potatoes, ground beef, and corn.
  8. In a bowl, mix the tomato soup with water and pour over the layered ingredients.
  9. Cover the casserole dish and bake for 1 to 1 1/4 hours, or until potatoes are tender.
