Ingredients

  • 2 green peppers
  • 2 sweet red peppers
  • 2 sweet yellow peppers
  • 2 Tbsp. olive oil
  • 1/2 tsp. dried whole thyme
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 2 c. jicama strips

Instructions

  1. Seed peppers and cut into 1/4-inch strips.
  2. Saute peppers in oil for 5 minutes or until crisp-tender.
  3. Stir in dried thyme, salt, and freshly ground pepper.
  4. Chill the mixture.
  5. Before serving, stir in jicama strips.
