Ingredients

  • 7 to 8 lb. trimmed prime beef rib roast
  • 1 Tbsp. vegetable oil
  • 3 Tbsp. chopped fresh thyme leaves

Instructions

  1. Preheat oven to 475°F.
  2. Put the roast, rib side down, in the center of a 13 x 9-inch flameproof roasting pan.
  3. Rub all over with 1 tablespoon vegetable oil and press chopped fresh thyme leaves to adhere.
  4. Season the beef generously with salt and pepper.
  5. Roast beef in the middle of the oven for 30 minutes.
  6. Remove beef from oven and skim all but 1/2 cup fat from the pan using a bulb baster.
  7. Baste the beef with the remaining fat in the pan.
  8. Reduce oven temperature to 375°F.
  9. Roast beef for 1 1/4 to 1 1/2 hours more, or until a meat thermometer inserted into the center registers 115°F.
  10. Transfer beef to a platter, reserving pan juices.
  11. Let the beef stand for 25 minutes before carving.
