Thyme Rib Roast

- Preheat oven to 475°F.
- Put the roast, rib side down, in the center of a 13 x 9-inch flameproof roasting pan.
- Rub all over with 1 tablespoon vegetable oil and press chopped fresh thyme leaves to adhere.
- Season the beef generously with salt and pepper.
- Roast beef in the middle of the oven for 30 minutes.
- Remove beef from oven and skim all but 1/2 cup fat from the pan using a bulb baster.
- Baste the beef with the remaining fat in the pan.
- Reduce oven temperature to 375°F.
- Roast beef for 1 1/4 to 1 1/2 hours more, or until a meat thermometer inserted into the center registers 115°F.
- Transfer beef to a platter, reserving pan juices.
- Let the beef stand for 25 minutes before carving.
