Ingredients

  • 16 oz. can sauerkraut, drained and dried
  • 1 small onion, chopped
  • 1/4 lb. cooked corned beef
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 2 Tbsp. horseradish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place the drained and dried sauerkraut, chopped onion, and cooked corned beef in a blender. Process until finely chopped.
  3. In a mixing bowl, combine the processed mixture with mayonnaise, sour cream, and horseradish (if using).
  4. Transfer the mixture to a 1-quart casserole dish.
  5. Bake in the preheated oven for 30 to 40 minutes until hot and bubbly.
  6. Serve with rye cocktail bread, rye bagel chips, or crackers.
