Ingredients

  • 2 c. milk
  • 2 eggs
  • 1/2 c. sugar
  • 1 plain pound cake (1 lb.)
  • 1 (16 oz.) can apricots, drained and chopped
  • 1 c. chopped pecans

Instructions

  1. Into a large Tupperware bowl with lid, break the pound cake into small pieces.
  2. Add chopped apricots, chopped pecans, and bourbon to the bowl.
  3. In a heavy saucepan, combine eggs, milk, and sugar.
  4. Stir well until the mixture is smooth.
  5. Cook over medium heat until the mixture thickens and will coat a wooden spoon.
  6. Pour the cooked mixture over the pound cake, apricots, pecans, and bourbon.
  7. Stir until well mixed.
  8. Cover and refrigerate for 4 hours or longer.
  9. When ready to serve, spoon into parfait glasses, top with whipped cream and a maraschino cherry.
