Ingredients

  • 6 c. pecans
  • 3 egg whites
  • 1/2 c. butter
  • 1 1/4 c. sugar
  • 1 tsp. salt
  • 1 tsp. vanilla

Instructions

  1. Spread pecans on a cookie sheet and roast at 275°F for 20 minutes.
  2. Allow pecans to cool.
  3. Beat egg whites until foamy.
  4. Melt butter in a 9 x 12-inch loaf pan in the oven.
  5. Add sugar, vanilla, and salt to the foamy egg whites.
  6. Beat until stiff peaks form.
  7. Fold in the roasted pecans.
  8. Pour mixture into the pan with melted butter and spread evenly.
  9. Bake at 275°F for 45 minutes, stirring every 15 minutes until butter is absorbed and nuts are brown.
  10. Dump onto waxed paper to cool.
  11. Break into pieces and store in an airtight container.
