Toasted Zucchini Snacks

Ingredients

  • 2 c. shredded zucchini
  • 1 tsp. salt
  • 1/2 c. mayonnaise
  • 1/2 c. plain yogurt
  • 1/4 c. grated Romano or Parmesan cheese
  • 4 green onions, thinly sliced
  • 1 tsp. Worcestershire sauce
  • 1 clove garlic, minced
  • 1/4 tsp. hot pepper sauce
  • sliced party rye or French bread slices

Instructions

  1. Stir zucchini and salt; let stand 1 hour and drain.
  2. Rinse and drain well, pressing out excess liquid.
  3. Add mayonnaise, yogurt, cheese, onions, Worcestershire sauce, garlic and hot pepper sauce. Spread on bread and bake on baking sheet at 375° for 12 minutes. Serve immediately.
  4. Makes about 48 rye bread or 32 French bread snacks.
