Tofu Banana Bread

Ingredients

  • 16 oz. tofu
  • 2 eggs
  • 2 apples, cored
  • 3 Tbsp. lite sweetener
  • 1/4 tsp. cinnamon
  • 2 tsp. banana extract
  • 1/2 tsp. baking soda
  • 1/4 c. water
  • 2 c. bran

Instructions

  1. Mix all ingredients in blender, except the bran.
  2. After apples are blended, in small chunks, pour into bowl and mix in bran. Pour mixture into Pam-sprayed loaf tin.
  3. Bake at 350° for 45 minutes.
  4. Turn out onto a rack.
  5. Cool.
