Tofu Lasagna

Instructions
- Cook the noodles as directed.
- Wash with cold water; set aside.
- Have sauce, grated cheese, mushrooms and parsley ready for assembly.
- Mix tofu, Parmesan and garlic.
- Line the bottom of an 8 x 8-inch pan with a layer of noodles.
- Sprinkle 1/2 of the tofu mixture, 1/2 of the mushrooms, 1/2 of parsley, 1/2 cup of sauce and some cheese.
- Repeat steps, ending with a layer of noodles. Sprinkle with cheese and top with remaining sauce.
- Bake at 350° for 45 minutes.
