Ingredients

  • 1/2 block soft tofu
  • 1 (3 oz.) box Jell-O (any flavor)
  • 2 Tbsp. lemon juice
  • 1 (8 oz.) container Cool Whip
  • 1 ready to bake pie shell

Instructions

  1. Dissolve the Jell-O in 1 cup boiling water in a bowl.
  2. Cool the Jell-O in the refrigerator until slightly thickened.
  3. In another bowl, blend the tofu until smooth using a mixer or blender.
  4. Add lemon juice and the thickened Jell-O to the tofu mixture, then fold in half of the Cool Whip.
  5. Pour the mixture into the ready-to-bake pie shell.
  6. Spread the remaining Cool Whip on top of the Jell-O mixture.
  7. Refrigerate until the pie is set.
