Ingredients

  • 4 large ripe tomatoes
  • 2 medium onions
  • 2 garlic cloves
  • juice of 1 lime
  • 1 seeded and minced jalapeno
  • 7 cilantro sprigs
  • salt and pepper to taste
  • 1 Tbsp. red wine vinegar
  • 1/2 to 2 ripe avocados

Instructions

  1. Combine all ingredients except avocado in a large bowl.
  2. Mix well.
  3. Refrigerate for 3 to 4 hours or overnight.
  4. Remove from refrigerator at least 1/2 hour before serving.
  5. Add diced avocado just before serving.
  6. Mix well with a large wooden spoon.

Tips & Substitutions

For a more vibrant flavor, allow the salsa to marinate for a full 24 hours. If you prefer a milder salsa, use less jalapeno or remove the seeds completely. Fresh lime juice is key for brightness, but you can substitute with lemon juice if needed. Consider adding a pinch of cumin for a smoky touch, which works well with Mexican recipes.

Serving Suggestions

Serve this salsa with tortilla chips for a perfect appetizer or as a refreshing topping for grilled chicken or fish. It pairs beautifully with Laurie'S Super Nachos for a crowd-pleasing dish. For a light meal, serve it alongside a green salad or use it as a filling for tacos.

Storage & Reheating

Store leftover salsa in an airtight container in the refrigerator for up to 2 days. To prevent browning, press plastic wrap directly onto the surface of the salsa before sealing. While it's best fresh, you can gently stir to remix before serving again, though the avocado may not hold up as well.

Frequently Asked Questions

Can I make this salsa ahead of time?

Yes, it's best to prepare the salsa a few hours in advance to enhance the flavors. However, add the avocado just before serving to keep it fresh and green. If you need to make it a day ahead, store it without avocado, then mix it in right before serving.

What can I use instead of jalapeno?

If you're looking for a milder option, consider using a poblano pepper or even a bell pepper for sweetness. Alternatively, you can omit the pepper entirely and add a pinch of cayenne pepper for a subtle heat without the crunch of fresh jalapeno.

How can I make this salsa spicier?

To increase the heat level, you can add more jalapeno or include a dash of hot sauce. Another option is to incorporate diced serrano peppers, which are spicier than jalapenos. Just remember to taste along the way to achieve your desired spice level.
