Tomato And Basil Bread Pudding

- Preheat oven to 400°F. Lightly grease an 8 inch square baking dish.
- Heat oil in a large frying pan over medium heat. Sweat onion for 8-10 mins, or until very soft. Add tomato and cook for 10 mins, or until slightly thickened. Add sugar and basil. Season. Transfer to prepared dish.
- Spread 1 side of bread with butter then place in dish, buttered-side up, overlapping. Sprinkle with cheese and bake for 30 mins, or until bubbly and golden.
