Ingredients

  • 1 lb. Brie or Camembert cheese, rind removed and cut into small pieces
  • 4 large tomatoes, coarsely chopped
  • 1 cup chopped fresh basil
  • 1/2 cup olive or vegetable oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 1/2 lb. uncooked linguine
  • shredded Parmesan cheese

Instructions

  1. In a large serving bowl, combine the Brie or Camembert cheese, chopped tomatoes, chopped fresh basil, olive or vegetable oil, minced garlic, salt, and white pepper. Let stand at room temperature for up to 1 1/2 hours.
  2. Cook linguine according to package directions; drain.
  3. Toss the cooked linguine with the cheese mixture.
  4. Sprinkle with shredded Parmesan cheese.
  5. Serve immediately.
