Ingredients

  • 1 1/2 lb. ripe tomatoes, seeded
  • 2 cloves garlic, finely minced
  • 3 Tbsp. capers
  • 1 lb. spaghetti
  • 1/4 lb. goat cheese, olive-sized pieces
  • 5 Tbsp. extra virgin olive oil
  • 1/4 tsp. red pepper flakes
  • salt
  • 10 basil leaves, chopped

Instructions

  1. Cut the tomatoes into chunks and set aside.
  2. Cook the spaghetti in salted boiling water until al dente, then drain.
  3. In a large bowl, toss the drained spaghetti with goat cheese until partially melted and combined.
  4. Transfer the pasta and goat cheese to a saucepan and sauté over medium-high heat for 2 minutes to release the garlic aroma.
  5. Add the chopped basil and the chopped tomatoes to the saucepan.
  6. Toss everything together and serve immediately.
